... with an awesome chocolate sauce and strawberry chia compote

I love treating myself to pancakes whether it is pancake day or not! There is just something a little special about them that can make you feel like you have your life put together when you find time to whip up some of these babies.

I've created a plant based recipe for simple oat pancakes with chocolate and strawberry sauces; ⁣the way this iconic duo pair sharp sweetness with rich creamy wonderfulness is magical. Trust me, the chocolate sauce is amazing and I think the magic ingredient for its decadence is the tahini. For extra indulgence sprinkle sliced banana, cacao nibs, fresh mint leaves and a drizzle of maple syrup.

Ingredients

VGN, DF, RSF

⁣⁣Makes ~10 pancakes

Simple oat pancakes:

100g oats ⁣⁣
50g plain flour ⁣⁣
1 tsp baking powder ⁣⁣
1 tsp chia seeds ⁣⁣
1 tbsp ground flaxseeds (optional)⁣⁣
Pinch of salt ⁣⁣
200ml oat milk⁣⁣
1 tbsp coconut oil⁣⁣
1 tbsp of maple syrup ⁣⁣

Strawberry chia compote:⁣⁣
Big handful of strawberries ~100g (frozen or fresh)⁣⁣
1 tsp chia seeds ⁣⁣
1/2 tbsp maple syrup ⁣⁣
⁣⁣
Awesome chocolate sauce:⁣⁣
2 tbsp Cacao powder ⁣⁣
1 tbsp oat milk ⁣⁣
1 tbsp maple syrup or date syrup ⁣⁣
1 tsp tahini ⁣⁣
Pinch of salt ⁣⁣

Method

Place the oats in a blender or food processor and blend into a rough flour. Add the oats, flour, baking powder, chia, flaxseed and salt to a mixing bowl, stir together and make a well in the middle. Add the oat milk, coconut oil and maple syrup and mix together thoroughly to form a smooth batter. ⁣⁣

While the batter is left to thicken, add the strawberries and a splash of water to a pan and heat for 3-5 minutes until they are juicy and you can mash them a bit. Stir in the maple syrup and chia seeds and continue to mash it together. ⁣⁣

Leave this to thicken while you mix all the chocolate sauce ingredients in a bowl.⁣⁣

Heat a pan over medium heat and melt a tablespoon of coconut oil. Add heaped tablespoons of mixture to the pan and spread them out with a spoon slightly to form rough circles. Leave the pancakes for 3-4 minutes before flipping and cooking for another 2-3 minutes. Place your cooked pancakes in a pile on a warm plate under a tea towel if you can while you cook the rest. ⁣⁣

Add your sauces and top with leftover strawberries, cacao nibs, mint leaves, maple syrup or sliced banana and enjoy! ⁣⁣
