... deliciously creamy plant-based smoothie

The banana and avocado make this smoothie so creamy for a plant-based green smoothie and it really is delicious. Chuck in some of your favourite superfood powders for an extra boost!

It is best to use a mixture of frozen and fresh ingredients as this chills the smoothie, but if all your ingredients are fresh I recommend popping in a few ice cubes to give it an extra cold finish. 

TIP - I love keeping my avocado halves frozen at the perfect point of freshness/ripeness. You can buy bags of them like this in Iceland or freeze your own and they will defrost in 3 hours at room temp. or 12 hours in the fridge (overnight before breakfast), or in this case chuck still frozen into a smoothie.

Ingredients

VEG, VGN, DF, GF, RSF Serves 1 ⁣

  • 200ml nut milk (I use oat or coconut milk, and keep adding splashes till desired consistency)
  • 1 ripe banana (frozen or fresh)
  • 1/2 a ripe avocado (frozen or fresh)
  • 1 generous tbsp smooth almond butter
  • handful of spinach (frozen or fresh)
  • Superfood powders*
* I use Maca powder, ground flaxseed and Baobab powder but others are ground chia seeds, spirulina, wheatgrass 

Method

Blend all the ingredients together. Serve as a drink or slightly thicker served in a bowl topped with fruit, chia seeds and nut butter.
